How To Make Avocado on Toast with Chorizo & Fried Eggs

Ingredients

  • 4 slices of bread
  • 2 ripe avocados
  • 1/2 lemon, juiced
  • Salt and pepper to taste
  • 8 slices of chorizo
  • 4 eggs
  • Fresh cilantro for garnish

Instructions

  1. Toast the bread slices until golden brown.

  2. In a small bowl, mash the avocados with lemon juice, salt, and pepper.

  3. In a separate pan, cook the chorizo slices over medium heat until crispy.

  4. In another pan, fry the eggs to your desired level of doneness.

  5. Spread the mashed avocado onto each toast slice.

  6. Top with chorizo slices and a fried egg.

  7. Garnish with fresh cilantro.

  8. Serve immediately and enjoy!
