Ingredients

  • 2 ripe avocados, sliced
  • 200g spicy chorizo, sliced
  • 1 red onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat a pan over medium heat and add the sliced chorizo. Cook until crispy and set aside.

  2. In a large bowl, combine the avocado slices, red onion, bell pepper, and cherry tomatoes.

  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

  4. Pour the dressing over the avocado mixture and toss gently to combine.

  5. Divide the salad into 4 plates and top with the crispy chorizo.

  6. Garnish with fresh cilantro and serve warm.
