Ingredients
- 2 ripe avocados, sliced
- 200g spicy chorizo, sliced
- 1 red onion, thinly sliced
- 1 red bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Heat a pan over medium heat and add the sliced chorizo. Cook until crispy and set aside.

In a large bowl, combine the avocado slices, red onion, bell pepper, and cherry tomatoes.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
