How To Make Chorizo & Halloumi Breakfast Baguette

Ingredients
- 4 small baguettes
- 8 slices of chorizo
- 8 slices of halloumi
- 4 eggs
- 1 tbsp olive oil
- Salt and pepper, to taste
- Fresh arugula, for garnish
Instructions

Preheat the oven to 350°F (175°C).

Slice the baguettes in half lengthwise.

In a skillet, heat the olive oil over medium heat.

Add the chorizo slices and cook until crispy, about 2-3 minutes per side.

Remove the chorizo from the skillet and set aside.

In the same skillet, cook the halloumi slices until golden brown, about 1-2 minutes per side. Set aside.

Using the same skillet, fry the eggs to your desired doneness.

Assemble the baguettes by layering the chorizo, halloumi, and fried eggs on top of the bottom halves.

Season with salt and pepper.

Place the baguettes on a baking sheet and bake in the preheated oven for 5 minutes, or until the cheese is melted.

Remove from the oven and top with fresh arugula.
