Ingredients

  • 4 large eggs
  • 1 tbsp salt
  • 8 oz chorizo, sliced
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Fill a medium saucepan with water and bring to a boil. Gently add the eggs and 1 tbsp of salt. Cook for 7 minutes for soft-boiled eggs.

  2. While the eggs are cooking, heat a skillet over medium heat and cook the chorizo slices until crispy, about 5 minutes.

  3. Remove the eggs from the saucepan and immediately transfer to a bowl of ice water to cool and stop the cooking process. Once cooled, carefully peel the eggs and set aside.

  4. In a large bowl, combine the salad greens, cherry tomatoes, red onion, and feta cheese.

  5. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the dressing.

  6. Slice the soft-boiled eggs in half and arrange on top of the salad. Drizzle the dressing over the salad and top with the crispy chorizo slices.

  7. Serve immediately and enjoy!
