How To Make Warm Lemon & Thyme Chicken Salad

Ingredients
- 4 boneless, skinless chicken breasts
- 1 lemon, juiced and zested
- 2 tablespoons fresh thyme leaves
- 2 cloves of garlic, minced
- Salt and black pepper, to taste
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup sliced almonds
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
Instructions

In a small bowl, whisk together the lemon juice, lemon zest, minced garlic, thyme leaves, olive oil, Dijon mustard, honey, salt, and black pepper.

Place the chicken breasts in a shallow dish and pour the lemon and thyme dressing over them, making sure to coat each piece. Let marinate for 10 minutes.

Heat a grill or grill pan over medium-high heat. Cook the chicken breasts for about 6-8 minutes per side, or until cooked through with no pink in the center. Remove from heat and let rest for 5 minutes.

In a large bowl, toss together the salad greens, cherry tomatoes, red onion, and sliced almonds.

Slice the cooked chicken breasts and arrange them over the salad.

Drizzle the remaining dressing over the salad or serve it on the side.
