How To Make Trader Joe’s Soy Chorizo Breakfast Tacos
Plant-based breakfast tacos made with spicy soy chorizo, scrambled eggs, and fresh veggies.
Serves:
Ingredients
- 1 package of Trader Joe’s Soy Chorizo
- 8 large eggs
- 1 tbsp olive oil
- Salt and pepper to taste
- 8 small corn tortillas
- 1 avocado, diced
- 1/2 cup of chopped cilantro
- 1/2 cup of diced tomatoes
- Hot sauce (optional)
Instructions

Heat a large non-stick skillet over medium-high heat.

Remove the soy chorizo from its casing and add it to the skillet. Cook for 5-7 minutes, stirring occasionally until lightly browned and crumbled.

In a separate bowl, whisk the eggs and season with salt and pepper to taste.

Push the soy chorizo to one side of the skillet and add the olive oil.

Pour the eggs into the empty side of the skillet and scramble them, stirring occasionally until fully cooked.

Meanwhile, heat the tortillas according to the package instructions.

Assemble the tacos by spooning the soy chorizo and eggs onto each tortilla.

Top with diced avocado, cilantro, tomatoes, and hot sauce if desired.
