  • 1 cup almond flour
  • 1/4 cup butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup erythritol or stevia
  • 2 eggs
  • 1 tsp vanilla extract
  • Juice of 1/2 lemon
  • Fresh berries (optional, for topping)

Instructions

  1. Preheat oven to 325°F.

  2. Mix almond flour and melted butter until well combined. Press mixture into the bottom of a greased 9-inch pie dish.

  3. In a large bowl, beat cream cheese and erythritol or stevia until smooth. Mix in eggs one at a time, then add vanilla extract and lemon juice.

  4. Pour mixture over the crust and smooth the top with a spatula.

  5. Bake for 45-50 minutes or until the center of the cheesecake is almost set.

  6. Let cool for at least an hour before slicing and serving. Top with fresh berries if desired.
