How To Make Coconut Flour Lemon Cookies

Ingredients
- 1/3 cup coconut flour
- 1/4 cup melted coconut oil
- 1/4 cup honey
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 1/4 tsp baking powder
- Pinch of salt
- 1 egg
Instructions

Preheat the oven to 350°F.

In a mixing bowl, whisk together the coconut flour, baking powder, and salt.

In another bowl, whisk the egg, melted coconut oil, honey, lemon juice, and vanilla extract until well combined.

Gradually stir the dry ingredients into the wet mixture until a dough forms.

Use a cookie scoop or spoon to form dough balls and place on a baking sheet lined with parchment paper.

Flatten the balls with a fork.

Bake in the preheated oven for 12-15 minutes or until lightly golden.

Remove from oven, let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
