Mounds Chocolate Coconut Cookies Recipe

How To Make Mounds Chocolate Coconut Cookies

Delicious chocolate chip cookies filled with sweet coconut and topped with a Mounds candy.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup shredded sweetened coconut
  • 1/2 cup semisweet chocolate chips
  • 8 Mini Mounds candies, cut in half

Instructions

  1. In a large bowl, cream together the butter and sugars until light and fluffy.

  2. Beat in the egg and vanilla.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.

  4. Stir in the shredded coconut and chocolate chips.

  5. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

  6. Roll the cookie dough into 8-10 balls and place them onto the prepared baking sheet.

  7. Bake for 10-12 minutes, or until the edges are lightly golden.

  8. Immediately after removing the cookies from the oven, press a half of a Mini Mounds candy onto the top of each cookie.

  9. Allow the cookies to cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely.
