- 1/2 cup erythritol
- 2 eggs
- 1 tsp vanilla extract

Preheat oven to 350°F (180°C).

In a bowl, mix together peanut butter and erythritol until smooth.

Add in eggs, vanilla extract, and baking soda. Mix well.

Use a spoon or cookie scoop to form cookies and place them on a baking sheet lined with parchment paper.
