Instructions

  1. Preheat oven to 350°F (180°C).

  2. In a bowl, mix together peanut butter and erythritol until smooth.

  3. Add in eggs, vanilla extract, and baking soda. Mix well.

  4. Use a spoon or cookie scoop to form cookies and place them on a baking sheet lined with parchment paper.

  5. Use a fork to press down lightly on each cookie to create a crisscross pattern.

  6. Bake for 10-12 minutes or until the edges are slightly golden brown.

  7. Remove from oven and let cool for a few minutes before serving.
