  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 2 tbsp honey
  • 2 tbsp coconut oil
  • 2 eggs
  • 1/2 cup fresh blueberries


  1. Preheat oven to 350°F.

  2. In a mixing bowl, add almond flour, coconut flour, baking soda, baking powder, and salt.

  3. In another mixing bowl, add unsweetened applesauce, honey, coconut oil, and eggs.

  4. Mix the wet ingredients into the dry ingredients until well mixed.

  5. Add in fresh blueberries and gently fold in.

  6. Pour the mixture into a baking dish lined with parchment paper.

  7. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

  8. Let the cake cool for 10-15 minutes before serving.
