  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 tbsp poppy seeds
  • 1/4 cup unsweetened applesauce
  • 3/4 cup non-fat Greek yogurt
  • 1/3 cup lemon juice
  • 1/4 cup honey
  • 1 egg

Instructions

  1. Preheat oven to 350°F / 175°C. Coat an 8-inch cake pan with nonstick cooking spray.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds.

  3. In a separate bowl, mix applesauce, yogurt, lemon juice, honey, and egg until well combined.

  4. Gradually add the dry ingredients to the wet mixture until fully combined.

  5. Pour the batter into the prepared cake pan and bake in preheated oven for 25-30 minutes or until a toothpick comes out clean when inserted in the middle.

  6. Transfer pan to a wire rack and let cool for 10 minutes. Use a knife to loosen the edges of the cake and remove it from the pan and let it cool fully on the wire rack.
