How To Make Dairy Free Sun Dried Tomato Pasta Recipe
A creamy and satisfying pasta dish made without any dairy products.
Serves:
Ingredients
- 12 oz pasta (gluten-free if necessary)
- 1/2 cup sun-dried tomatoes
- 1/4 cup raw cashews
- 1/4 cup nutritional yeast
- 2 cloves garlic
- 1/4 tsp red pepper flakes
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped (optional)
Instructions

Cook pasta according to package directions.

While pasta is cooking, place sun-dried tomatoes, cashews, nutritional yeast, garlic and red pepper flakes in a food processor or high-speed blender and process until finely chopped.

Once pasta is done cooking, reserve 1 cup of pasta water and drain the rest.

In a large bowl, mix together the sun-dried tomato mixture, olive oil, and pasta water. Add the drained pasta and toss until well combined.

Season with salt and pepper to taste and sprinkle with fresh parsley, if desired.
