  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup Stevia
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1/4 cup unsweetened almond milk

Instructions

  1. Preheat oven to 350°F.

  2. In a large bowl, mix together the grated carrots, almond flour, coconut flour, Stevia, cinnamon, nutmeg, ginger, and salt.

  3. Mix in the unsweetened applesauce, eggs, and unsweetened almond milk. Stir until well combined.

  4. Pour the batter into a greased 8-inch cake pan.

  5. Bake for 30-35 minutes, or until a toothpick comes out clean.

  6. Let cool before serving.
