  • 1 large apple, peeled and diced
  • 1/2 cup almond flour
  • 1/2 cup oat flour
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain nonfat Greek yogurt
  • 1/3 cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs

Instructions

  1. Preheat oven to 350°F and grease a 8 inch cake pan.

  2. In a medium bowl, whisk together almond flour, oat flour, baking powder, salt, and cinnamon.

  3. In another bowl, mix together applesauce, Greek yogurt, and coconut sugar.

  4. Beat in eggs, one at a time.

  5. Add the dry ingredients to the wet ingredients, mixing until well combined.

  6. Add diced apples and stir to combine.

  7. Pour batter into the greased cake pan and bake for 45-50 minutes, or until a toothpick comes out clean when inserted into the center.

  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
