  • 1 cup unsweetened almond milk
  • 1/2 cup granulated sugar
  • 1/3 cup coconut oil, melted
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, mix together flour, sugar, baking powder, and salt.

  3. Add almond milk, melted coconut oil, and vanilla extract. Mix well until batter is smooth.

  4. Gently fold in blueberries.

  5. Pour batter into a 8-inch cake pan that has been greased and lined with parchment paper.
