Ingredients

  • 4 large eggs
  • 1/2 cup diced ham
  • 1/2 cup shredded cheddar cheese
  • 4 burrito-sized tortillas
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Salsa or hot sauce for serving (optional)

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat.

  2. In a mixing bowl, whisk together eggs, salt, and pepper. Pour into the skillet and scramble until cooked through.

  3. Add diced ham to the skillet and stir until heated through.

  4. Assemble burritos by placing a tortilla on a plate, adding a scoop of the egg and ham mixture, and then adding cheese. Roll up the tortilla and repeat with the remaining three.

  5. Serve immediately with salsa or hot sauce, if desired.
