Ingredients

  • 8 oz penne pasta
  • 2 chicken breasts, boneless and skinless
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup Dijon mustard
  • 2 tbsp honey
  • 1/2 cup chicken broth
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for 6-8 minutes on each side, or until cooked through. Remove from the skillet and set aside.

  3. In the same skillet, add the minced garlic and cook for 1 minute.

  4. Whisk together the Dijon mustard, honey, chicken broth, salt, and pepper. Pour the mixture into the skillet with the garlic and cook over low heat for 2-3 minutes, until heated through.

  5. Slice the cooked chicken breasts and add them to the skillet with the sauce. Cook for an additional 2-3 minutes, until the chicken is coated in the sauce.

  6. Add the cooked penne pasta to the skillet and toss until well coated. Cook for an additional 2 minutes to heat through.

  7. Serve the honey-mustard chicken pasta hot, garnished with fresh parsley.
