Ingredients
- 2 cups of rhubarb, chopped
- 2 apples, peeled and sliced
- 1/2 cup of granulated sugar
- 1 tsp of ginger, grated
- 1 cup of custard
- 1 cup of gingerbread cookies, crumbled
- Whipped cream, for garnish
Instructions

In a saucepan, combine the rhubarb, apples, sugar, and grated ginger. Cook over medium heat until the fruits are softened, about 10 minutes. Remove from heat and let cool.

In serving glasses or bowls, layer the poached rhubarb and apple mixture with the custard. Repeat the layers until all ingredients are used.

In a separate bowl, mix the crumbled gingerbread cookies with a tablespoon of sugar.

Sprinkle the gingerbread cookie crumble over the trifle layers.

Refrigerate the trifle for at least 1 hour to allow the flavors to meld together.
