How To Make Curried Bean & Coconut Cod

Ingredients

  • 4 cod fillets
  • 1 can of coconut milk
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 can of kidney beans, drained and rinsed
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. In a large skillet, heat some oil over medium heat. Add the diced onion and minced garlic, and cook until softened.

  2. Add the curry powder, turmeric, cumin, and paprika to the skillet. Stir well to coat the onions and garlic with the spices.

  3. Pour in the coconut milk and bring to a simmer.

  4. Season the cod fillets with salt and pepper, then carefully place them into the simmering coconut milk mixture.

  5. Cover the skillet and let the fish cook for about 8-10 minutes, or until it flakes easily with a fork.

  6. Remove the cod fillets from the skillet and set them aside on a plate.

  7. Add the kidney beans to the skillet and cook for another 5 minutes, until heated through.

  8. Serve the cod fillets on a bed of cooked rice, topped with the curried beans and coconut sauce.

  9. Garnish with fresh cilantro before serving.
