How To Make Spiced Lamb Meatballs, Roast Apricots & Fregula

- 1 lb ground lamb
- 1/2 cup breadcrumbs
- 1/4 cup chopped parsley
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup olive oil
- 8 apricots, halved and pitted
- 2 cups fregula pasta
- 4 cups chicken broth
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 375°F (190°C).

In a large bowl, combine the ground lamb, breadcrumbs, parsley, garlic, cumin, coriander, paprika, salt, and black pepper. Mix well.

Shape the mixture into small meatballs, about 1 inch in diameter.

Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.

Transfer the meatballs to a baking sheet and roast in the preheated oven for 15-20 minutes or until cooked through.

While the meatballs are roasting, place the apricots on a separate baking sheet and roast for 10-12 minutes until softened.

In the meantime, cook the fregula pasta according to package instructions in chicken broth. Drain the pasta.

Serve the spiced lamb meatballs with roasted apricots and cooked fregula pasta.

Garnish with grated Parmesan cheese and fresh parsley.
