Ingredients
- 2 cups of rhubarb, chopped
- 1/2 cup of sugar
- 1 tablespoon of water
- 1 cup of heavy cream
- 1 cup of custard
- 1/2 teaspoon of vanilla extract
- 1 cup of crushed shortbread cookies
- Fresh mint leaves for garnish
Instructions

In a saucepan, combine the rhubarb, sugar, and water. Cook over medium heat until the rhubarb is tender and the mixture has thickened slightly, about 10 minutes. Remove from heat and let cool.

In a separate bowl, whip the heavy cream until stiff peaks form.

In another bowl, mix together the custard and vanilla extract until well combined.

In serving glasses or bowls, layer the crushed shortbread cookies, rhubarb compote, whipped cream, and custard. Repeat the layers until all ingredients are used, finishing with a dollop of whipped cream on top.
