How To Make Rhubarb & Ginger Syllabub

Ingredients
- 400g rhubarb, chopped
- 100g sugar
- 1 tsp grated ginger
- 300ml double cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 4 ginger biscuits, crushed (optional)
Instructions

In a saucepan, cook the rhubarb, sugar, and grated ginger over medium heat until the rhubarb is soft. Remove from heat and let cool.

In a mixing bowl, whip the double cream, powdered sugar, and vanilla extract until soft peaks form.

Gently fold in the cooled rhubarb mixture into the whipped cream.

Spoon the syllabub into serving glasses or bowls. If desired, sprinkle crushed ginger biscuits on top.

Refrigerate for at least 2 hours before serving.
