  • 5tbspcornstarch
  • ¼cupwhite sugar
  • tspsalt
  • 2cupscoconut milk

Instructions

  1. Place the cornstarch, sugar, and salt into a saucepan.

  2. Stir in ¼ of the coconut milk to make a smooth paste.

  3. Stir in the remaining coconut milk, and bring to a simmer over low heat, stirring constantly.

  4. Cook and stir for about 5 minutes or until thickened so that it coats the back of a spoon.

  5. Pour into a 9×13-inch baking dish and refrigerate for about 2 hours until cold.
