How To Make Caldereta (Filipino Beef and Chorizo Stew)

Ingredients

  • 500g beef, cubed
  • 200g chorizo, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 bell peppers, sliced
  • 2 potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 cup tomato sauce
  • 2 cups beef broth
  • 1 tbsp fish sauce
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • Salt and pepper to taste
  • Cooking oil

Instructions

  1. In a large pot, heat cooking oil over medium heat. Add the onions and garlic, and sauté until fragrant.

  2. Add the beef and chorizo, and cook until browned. Season with salt, pepper, paprika, and cayenne pepper.

  3. Pour in the tomato sauce and beef broth. Stir well to combine. Bring to a boil, then reduce heat to low and let simmer for 1 hour or until the beef is tender.

  4. Add the potatoes, carrots, and bell peppers to the pot. Cook for an additional 20 minutes or until the vegetables are cooked through.

  5. Stir in the fish sauce and adjust seasoning according to taste.

  6. Serve hot with steamed rice.
