How To Make Bakewell Tarts
What better way to get you in a happy mood than having a slice of pie? These baked dishes are perfect for those who can’t get enough of flaky pastries. From an apple variant to a lemon meringue, these pies pastries recipes will satisfy your pie and pastry cravings.

Ingredients
- 1 sheet of ready-made shortcrust pastry
- 4 tbsp of raspberry jam
- 100g of ground almonds
- 100g of unsalted butter, softened
- 100g of caster sugar
- 2 eggs
- 1 tsp of almond extract
- 25g of flaked almonds
- Icing sugar, for dusting
Instructions

Preheat the oven to 180°C (350°F) and grease a muffin tin.

Roll out the shortcrust pastry and cut out circles to fit each muffin cup. Press them gently into the bottom.

Spread 1 tbsp of raspberry jam onto the bottom of each pastry case.

In a bowl, cream together the softened butter and caster sugar until light and fluffy.

Beat in the eggs, one at a time, and add the almond extract.

Gradually fold in the ground almonds until well combined.

Spoon the almond filling over the jam in each pastry case, smoothing the top.

Sprinkle each tart with flaked almonds.

Bake in the preheated oven for 20-25 minutes until golden brown and set.

Allow to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Dust with icing sugar before serving.
