Ingredients
- 1 lb pork, cubed
- 2 tbsp vegetable oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tomatoes, diced
- 2 cups cubed squash
- 1 jalapeno pepper, seeded and diced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

In a large skillet, heat the vegetable oil over medium heat. Add the pork and cook until browned on all sides. Remove from the skillet and set aside.

In the same skillet, add the onion and garlic. Cook until softened and fragrant, about 5 minutes.

Add the tomatoes, cubed squash, jalapeno pepper, cumin, paprika, dried oregano, salt, and pepper. Stir to combine.

Return the cooked pork to the skillet and stir to coat with the sauce.

Reduce the heat to low, cover, and simmer for 30 minutes or until the pork is tender and the squash is cooked through.
