How To Make Lemon Bakewell Tarts

Ingredients
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup ground almonds
- 1/4 cup lemon curd
- 1/4 cup raspberry jam
- 1/4 cup sliced almonds
- Powdered sugar, for dusting
Instructions

Preheat your oven to 350°F (175°C).

In a food processor, combine the flour, sugar, and butter. Pulse until the mixture resembles fine breadcrumbs.

Add the ground almonds and pulse a few more times to combine.

Press the mixture into four individual tart pans or one 8-inch tart pan, making sure to evenly cover the bottom and sides.

Bake the crusts in the preheated oven for 10 minutes, or until golden brown.

Remove the crusts from the oven and let them cool completely.

Once cooled, spread a thin layer of lemon curd over the bottom of each tart crust.

Spread a thin layer of raspberry jam over the lemon curd.

Sprinkle the sliced almonds over the jam.

Place the tarts back in the oven and bake for an additional 15-20 minutes, or until the almonds are lightly golden.

Remove from the oven and let the tarts cool.

Dust with powdered sugar before serving.
