Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/4 cup milk
  • 1/4 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp almond extract
  • 1/4 tsp salt
  • 1/2 cup cherry jam
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and line a 8-inch round cake tin.

  2. In a large mixing bowl, beat together the granulated sugar, softened butter, and almond extract until creamy.

  3. Add the eggs one at a time, beating well after each addition.

  4. In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.

  6. Pour half of the batter into the prepared cake tin. Spread the cherry jam evenly over the batter.

  7. Spoon the remaining batter over the cherry jam, smoothing the top with a spatula.

  8. In a small bowl, combine the sliced almonds with a tablespoon of granulated sugar. Sprinkle the almond mixture over the cake batter.

  9. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

  10. Allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

  11. Serve the Cherry Bakewell Cake as is or dusted with powdered sugar. Enjoy!
