Ingredients
- 1 pound of prickly pears, peeled and deseeded
- 2 cups of sugar
- 2 tbsp lemon juice
- 1 package of pectin
Instructions

In a blender, puree the prickly pears until smooth.

In a large saucepan, combine the prickly pear puree, sugar, and lemon juice.

Bring the mixture to a boil over medium heat, stirring constantly.

Stir in the pectin and continue to cook for 1 minute.

Remove from heat and let cool for 5 minutes.

Pour the jelly into sterilized jars and seal.

Let the jars cool to room temperature, then refrigerate for at least 4 hours to set.
