- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, room temperature
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup milk
- Red food coloring
- White chocolate chips
- Mickey Mouse cupcake liners
Instructions

Preheat the oven to 350°F (175°C) and line a cupcake pan with the Mickey Mouse cupcake liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, cream together the butter and sugar until light and fluffy.

Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

Add a few drops of red food coloring to the batter and mix until evenly colored.

Fill each cupcake liner ¾ full with batter. Place a few white chocolate chips on top of each cupcake to represent Minnie Mouse’s ears.

Bake for 15-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Allow the cupcakes to cool completely before decorating.
