How To Make Lemon Quark Cheesecake

Ingredients

  • 250g quark
  • 150g digestive biscuits
  • 80g unsalted butter, melted
  • 100g sugar
  • 2 eggs
  • 1 lemon, zested and juiced

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Crush the digestive biscuits into fine crumbs.

  3. Mix the melted butter and biscuit crumbs together in a bowl until well combined.

  4. Press the biscuit mixture into the base of a greased 9-inch springform pan to create the crust.

  5. In another bowl, beat the quark, sugar, eggs, lemon zest, and lemon juice until smooth and creamy.

  6. Pour the quark mixture over the biscuit crust in the pan.

  7. Bake in the preheated oven for 50 minutes, or until the cheesecake is set and slightly golden on top.

  8. Remove from the oven and let it cool completely before refrigerating for at least 2 hours.

  9. Serve chilled and enjoy!
