  • 125g all-purpose flour
  • 125g unsalted butter, softened
  • 125g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 100g powdered sugar

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Beat in the eggs one at a time, followed by the vanilla extract.

  4. Sift in the flour and baking powder, then fold gently until well combined.

  5. Spoon the batter into cupcake cases and bake in the preheated oven for 15-20 minutes, or until a toothpick inserted comes out clean.

  6. Allow the cakes to cool completely on a wire rack.

  7. Once cooled, sift the powdered sugar over the cakes to create a snowy effect.
