How To Make Salmon en croûte with ginger & raisins

Ingredients
- 1 ¼ lbs (500g) salmon fillets
- 2 sheets of puff pastry
- 2 tbsp olive oil
- 2 tbsp ginger, grated
- ¼ cup raisins
- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 400°F (200°C).

Lay one sheet of puff pastry on a baking sheet lined with parchment paper.

In a small bowl, mix together the olive oil, grated ginger, and raisins.

Place the salmon fillets on top of the puff pastry, season with salt and pepper, and spread the ginger and raisin mixture over the salmon.

Cover the salmon with the second sheet of puff pastry and seal the edges by pressing them together.

Brush the top of the pastry with beaten egg to create a golden crust.

Cut a few slits on top of the pastry to allow steam to escape.

Bake in the preheated oven for 25 minutes or until the pastry is golden and cooked through.

Serve the salmon en croûte with a side of vegetables or salad.
