Ingredients

  • 1 block of feta cheese, cut into cubes
  • 1 cup cherry tomatoes
  • 1/2 red onion, cut into squares
  • 1/2 cucumber, cut into cubes
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Wooden skewers

Instructions

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, salt, and pepper.

  2. Thread the feta cheese, cherry tomatoes, red onion, and cucumber onto the wooden skewers, alternating as desired.

  3. Place the skewers on a platter and brush them with the marinade.

  4. Heat a grill or grill pan over medium heat. Cook the skewers for about 2-3 minutes on each side, or until the feta starts to soften and the vegetables are slightly charred.

  5. Remove from heat and transfer the skewers to a serving platter.

  6. Drizzle with any remaining marinade and serve immediately.
