How To Make Stuffed Jollof Chicken with Hot Peanut & Tomato Sauce

Ingredients
- 4 chicken breasts
- 2 cups Jollof rice
- 1/2 cup peanuts
- 2 tomatoes, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 1 tsp paprika
- 1/2 tsp chili powder
- 1/2 cup chicken broth
- Salt and pepper to taste
- Olive oil
Instructions

Preheat the oven to 350°F (180°C).

Cut a slit in each chicken breast to create a pocket for the stuffing.

In a bowl, mix the Jollof rice with peanuts.

Stuff each chicken breast with the Jollof rice mixture and secure with toothpicks.

Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts until browned on all sides.

Transfer the chicken to a baking dish and bake in the preheated oven for 30 minutes or until cooked through.

In the same skillet, add the chopped tomatoes, diced onion, minced garlic, grated ginger, paprika, chili powder, and chicken broth. Cook until the tomatoes are soft and the sauce has thickened.

Remove the toothpicks from the chicken and serve with the hot peanut and tomato sauce.
