  • 125g unsalted butter, softened
  • 125g caster sugar
  • 2 large eggs
  • 125g self-raising flour
  • 1 tsp vanilla extract
  • 2-3 tbsp milk
  • icing sugar, for dusting

Instructions

  1. Preheat the oven to 180°C (350°F) and line a cupcake tray with paper cases.

  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.

  4. Sift in the flour and gently fold until just combined.

  5. Stir in the vanilla extract.

  6. Add enough milk to create a smooth, dropping consistency.

  7. Divide the mixture evenly between the paper cases, filling them about two-thirds full.

  8. Bake in the preheated oven for 18-20 minutes, or until golden brown and springy to the touch.

  9. Remove from the oven and transfer to a wire rack to cool completely.

  10. Once cooled, dust with icing sugar before serving.
