How To Make Fairy Cakes

- 125g unsalted butter, softened
- 125g caster sugar
- 2 large eggs
- 125g self-raising flour
- 1 tsp vanilla extract
- 2-3 tbsp milk
- icing sugar, for dusting
Instructions

Preheat the oven to 180°C (350°F) and line a cupcake tray with paper cases.

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.

Sift in the flour and gently fold until just combined.

Stir in the vanilla extract.

Add enough milk to create a smooth, dropping consistency.

Divide the mixture evenly between the paper cases, filling them about two-thirds full.

Bake in the preheated oven for 18-20 minutes, or until golden brown and springy to the touch.

Remove from the oven and transfer to a wire rack to cool completely.

Once cooled, dust with icing sugar before serving.
