How To Make Braised Beef with Cranberries & Spices

Ingredients
- 1.5 lbs beef chuck roast, cut into chunks
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 cup cranberries
- 1 cup beef broth
- 1 cup red wine
- 2 tbsp brown sugar
- 1 tbsp worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp ground cinnamon
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions

In a large pot, heat the olive oil over medium-high heat. Season the beef chunks with salt and pepper, then sear them in the pot until browned on all sides. Remove from the pot and set aside.

In the same pot, add the chopped onion and minced garlic. Cook until softened and fragrant, about 5 minutes.

Add the cranberries, beef broth, red wine, brown sugar, worcestershire sauce, dried thyme, dried rosemary, and ground cinnamon to the pot. Stir well to combine.

Return the seared beef chunks to the pot, making sure they are submerged in the liquid. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the beef is tender and easily falls apart.

Once the beef is cooked, remove it from the pot and shred it using two forks. Return the shredded beef to the pot and stir well to coat it with the flavorful sauce.

Serve the braised beef with cranberries & spices hot, over mashed potatoes or rice.
