Poor Man’s Cake with Whipped Cream Frosting Recipe

This is a cake my great grandmother made during WWI. It is a favorite of my children and myself.

How To Make Poor Man’s Cake with Whipped Cream Frosting

This whipped cream frosting is a fast recipe to make when adding a savory frost for your cake.

  • 1 lb raisins
  • 4 cups flour
  • 2 cups brown sugar
  • ½ tsp cinnamon
  • 2 tbsp shortening
  • 1/4 tsp. cloves
  • ¼ tsp allspice
  • 2 tsp soda
  • ½ tsp salt

Whipped topping:

  • 1 cup milk
  • 1 tbsp cornstarch
  • 1 cup powdered sugar
  • ½ cup margarine
  • ½ cup Crisco
  • 1 tsp vanilla
  • pineapple (well drained, crushed )
  1. Boil the raisins for 5 minutes in a quart of water and let it cool.

  2. Combine remaining ingredients and bake it in a 12×18-inch pan in 350 degrees F until the toothpick that's stuck in the center comes out clean.

  3. Prepared whipped cream topping to top.

Whipped topping:

  1. Mix milk and cornstarch in a saucepan and cook over low heat then set aside.

  2. Combine powdered sugar, margarine, Crisco, and vanilla. Mix well using an electric mixer until fluffy.

  3. Then add the milk and cornstarch mixture ¼ cup at a time.

  4. Beat after each addition.

  5. The well-drained, crushed pineapple may be added.

  6. Cook until thick.

  7. Pour over the finished cake.
