  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup milk
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp poppyseeds
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.

  2. In a large bowl, whisk together eggs, sugar, melted butter, milk, lemon juice, and lemon zest.

  3. In a separate bowl, combine flour, poppyseeds, baking powder, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Pour the batter into the greased loaf pan.

  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
