Ingredients

  • 200g rice noodles
  • 300g prawns, peeled and deveined
  • 2 cloves garlic, minced
  • 1 red chili, sliced
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1 cup bean sprouts
  • 2 spring onions, chopped
  • Fresh coriander leaves, for garnish
  • Lime wedges, for serving

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.

  2. Heat the vegetable oil in a large pan or wok over medium heat. Add the minced garlic and sliced red chili, and stir-fry for 1 minute until fragrant.

  3. Add the prawns to the pan and cook for 2-3 minutes until they turn pink and opaque.

  4. In a small bowl, mix together the soy sauce, fish sauce, oyster sauce, and sugar. Pour the sauce over the prawns and stir to coat them well.

  5. Add the cooked noodles to the pan and toss everything together until well combined and heated through.

  6. Stir in the bean sprouts and spring onions, and cook for another minute.

  7. Remove from heat and garnish with fresh coriander leaves. Serve hot with lime wedges on the side.
