Ingredients

  • 1 sheet of puff pastry
  • 2 large onions, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 4 oz goat’s cheese, crumbled
  • Fresh thyme leaves, for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the puff pastry and cut into 4 equal squares. Place on a lined baking sheet.

  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes.

  4. Stir in the balsamic vinegar and season with salt and pepper.

  5. Spoon the caramelized onions onto each square of puff pastry, leaving a small border around the edges.

  6. Top with crumbled goat’s cheese and sprinkle with fresh thyme leaves.

  7. Bake in the preheated oven for 25 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.

  8. Allow to cool slightly before serving. Garnish with additional thyme leaves, if desired.
