Ingredients
- 1 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 thumb-sized ginger, grated
- 2 tbsp laksa paste
- 1 can (400 ml) coconut milk
- 4 cups chicken broth
- 2 chicken breasts, cooked and shredded
- 200g rice noodles
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 lime, juiced
- Fresh cilantro, for garnish
- Bean sprouts, for garnish
- Lime wedges, for serving
Instructions

Heat vegetable oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook until fragrant.

Add laksa paste and stir for 1 minute.

Pour in coconut milk and chicken broth. Bring to a simmer.

Add shredded chicken and cook for 5 minutes.

Cook rice noodles according to package instructions. Drain and set aside.

Stir in fish sauce, soy sauce, and lime juice.

Divide cooked rice noodles among serving bowls. Ladle the laksa soup over the noodles.
