Ingredients

  • 8 cups of mixed greens
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of fresh basil leaves
  • 1/4 cup of fresh mint leaves
  • Juice of 1 lemon
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, avocado, feta cheese, basil leaves, and mint leaves.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve immediately and enjoy!
