Ingredients
- 2 cups of cooked rice
- 2 tablespoons of vegetable oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 garlic cloves, minced
- 1 teaspoon of ground ginger
- 1 teaspoon of ground paprika
- 1 teaspoon of curry powder
- 1 cup of mixed vegetables (carrots, peas, corn)
- ½ cup of chopped green onions
- Salt and pepper to taste
Instructions

Heat the oil in a large pan over medium-high heat. Add the onions, garlic, and peppers and stir fry until softened, about 5 minutes.

Add the ginger, paprika, and curry powder and stir until fragrant.

Add the cooked rice and mixed vegetables and stir until well combined and heated through, about 10 minutes.

Add salt and pepper to taste and garnish with chopped green onions.
