African Plantain Soup Recipe

How To Make African Plantain Soup

A hearty and comforting soup made with ripe plantains and a blend of African spices.

Serves:

Ingredients

  • 2 ripe plantains, peeled and chopped
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tbsp of freshly grated ginger
  • 2 cups of vegetable broth
  • 1 can of coconut milk
  • 1 tsp of cumin powder
  • 1 tsp of paprika
  • Salt and pepper to taste
  • 2 tbsp of vegetable oil
  • Fresh cilantro, chopped for garnish

Instructions

  1. In a large pot over medium heat, heat up the vegetable oil.

  2. Add chopped onions and minced garlic and cook for 2-3 minutes until fragrant.

  3. Add chopped plantains, ginger, cumin and paprika, and stir well to combine.

  4. Pour in vegetable broth and coconut milk, and bring the mixture to a boil.

  5. Reduce the heat and let it simmer for 35-40 minutes, or until the plantains are soft and tender.

  6. Puree the soup using an immersion blender, or transfer to a blender and blend until smooth.

  7. Season with salt and pepper to taste.

  8. Serve hot, garnished with fresh chopped cilantro.
