How To Make African Plantain Soup
A hearty and comforting soup made with ripe plantains and a blend of African spices.
Serves:
Ingredients
- 2 ripe plantains, peeled and chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 tbsp of freshly grated ginger
- 2 cups of vegetable broth
- 1 can of coconut milk
- 1 tsp of cumin powder
- 1 tsp of paprika
- Salt and pepper to taste
- 2 tbsp of vegetable oil
- Fresh cilantro, chopped for garnish
Instructions

In a large pot over medium heat, heat up the vegetable oil.

Add chopped onions and minced garlic and cook for 2-3 minutes until fragrant.

Add chopped plantains, ginger, cumin and paprika, and stir well to combine.

Pour in vegetable broth and coconut milk, and bring the mixture to a boil.

Reduce the heat and let it simmer for 35-40 minutes, or until the plantains are soft and tender.

Puree the soup using an immersion blender, or transfer to a blender and blend until smooth.

Season with salt and pepper to taste.

Serve hot, garnished with fresh chopped cilantro.
