How To Make African Spiced Couscous Recipe
Aromatic and flavorful couscous dish with African spices and veggies.
Serves:
Ingredients
- 1 cup of couscous
- 1 ¼ cup of chicken broth
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 1\2 tsp ground cinnamon
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1\4 tsp ground ginger
- 1/2 tsp paprika
- Salt and pepper to taste
- 2-3 tbsp of olive oil
- 1 lemon, juiced
- Handful of fresh parsley, chopped
- Handful of almonds, toasted and chopped
Instructions

Heat oil in a large skillet over medium heat.

Add onions and garlic, and sauté until fragrant and translucent.

Add the red bell pepper and cook for 2 minutes.

Stir in ground cinnamon, coriander, cumin, ginger, paprika, salt, and pepper to the skillet.

Add the chicken broth and bring to a boil.

Add the couscous, stir well, cover, and remove from heat.

Let couscous sit for 10 minutes, covered.

Fluff couscous with a fork and stir in lemon juice and chopped parsley.

Garnish with toasted almonds and serve.
