African Spiced Couscous Recipe

How To Make African Spiced Couscous Recipe

Serves:

Ingredients

  • 1 cup of couscous
  • 1 ¼ cup of chicken broth
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1\2 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1\4 tsp ground ginger
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2-3 tbsp of olive oil
  • 1 lemon, juiced
  • Handful of fresh parsley, chopped
  • Handful of almonds, toasted and chopped

Instructions

  1. Heat oil in a large skillet over medium heat.

  2. Add onions and garlic, and sauté until fragrant and translucent.

  3. Add the red bell pepper and cook for 2 minutes.

  4. Stir in ground cinnamon, coriander, cumin, ginger, paprika, salt, and pepper to the skillet.

  5. Add the chicken broth and bring to a boil.

  6. Add the couscous, stir well, cover, and remove from heat.

  7. Let couscous sit for 10 minutes, covered.

  8. Fluff couscous with a fork and stir in lemon juice and chopped parsley.

  9. Garnish with toasted almonds and serve.
