  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp ginger, grated
  • 2 sweet potatoes, peeled and cubed
  • 2 carrots, peeled and chopped
  • 1 red bell pepper, chopped
  • 4 cups vegetable broth
  • 1/2 cup creamy peanut butter
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro leaves, chopped (for garnish)

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat.

  2. Add onion, garlic, and ginger. Cook until onions are translucent, about 5 minutes.

  3. Add sweet potatoes, carrots, and red bell pepper. Cook for another 5 minutes.

  4. Pour in vegetable broth, peanut butter, cumin, coriander, and cayenne pepper. Mix well.

  5. Bring the mixture to a boil, then reduce heat to low and let simmer for 30-40 minutes, or until vegetables are tender.

  6. Season with salt and pepper to taste.

  7. Serve hot with chopped cilantro as garnish.
