How To Make African Peanut Stew Recipe
A hearty and flavorful stew made with creamy peanut butter, vegetables, and spices.

Ingredients
- 1 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 2 sweet potatoes, peeled and cubed
- 2 carrots, peeled and chopped
- 1 red bell pepper, chopped
- 4 cups vegetable broth
- 1/2 cup creamy peanut butter
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- Fresh cilantro leaves, chopped (for garnish)
Instructions

Heat vegetable oil in a large pot over medium-high heat.

Add onion, garlic, and ginger. Cook until onions are translucent, about 5 minutes.

Add sweet potatoes, carrots, and red bell pepper. Cook for another 5 minutes.

Pour in vegetable broth, peanut butter, cumin, coriander, and cayenne pepper. Mix well.

Bring the mixture to a boil, then reduce heat to low and let simmer for 30-40 minutes, or until vegetables are tender.

Season with salt and pepper to taste.
