African Peanut Soup Recipe

How To Make African Peanut Soup

Serves:

Ingredients

  • 1 tablespoon of vegetable oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon of grated ginger
  • 1 teaspoon of cumin powder
  • ¼ teaspoon of cayenne pepper
  • 4 cups of chicken or vegetable broth
  • 1 can of diced tomatoes, drained
  • 1 cup of smooth peanut butter
  • 1 sweet potato, peeled and diced
  • Salt, to taste
  • Chopped fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat the oil over medium heat.

  2. Add onion and cook for 5 minutes until softened.

  3. Add garlic, ginger, cumin, and cayenne pepper and cook for 1 minute until fragrant.

  4. Add broth, tomatoes, peanut butter, and sweet potato.

  5. Bring to a boil, then reduce heat and simmer for 20 minutes.

  6. Use an immersion blender or a regular blender to puree the soup until smooth.

  7. Season with salt to taste.

  8. Serve hot, garnished with cilantro and lime wedges.
