Ingredients

  • 1 small cabbage, chopped
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 1 red bell pepper, chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 2 tomatoes, chopped
  • 2 tablespoons of tomato paste
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground paprika
  • 1 teaspoon of turmeric
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of vegetable oil
  • 3 cups of vegetable broth

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.

  2. Add the carrots, bell pepper, and cabbage to the pot, and sauté for another 5 minutes.

  3. Stir in the chopped tomatoes, tomato paste, cumin, paprika, turmeric, salt, and black pepper. Cook for an additional 2 minutes.

  4. Pour in the vegetable broth and bring the stew to a boil. Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the cabbage is tender.

  5. Serve the African Cabbage Stew hot with your choice of bread or rice.
