How To Make African Cabbage Stew

Ingredients
- 1 small cabbage, chopped
- 1 onion, finely chopped
- 2 carrots, diced
- 1 red bell pepper, chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, minced
- 2 tomatoes, chopped
- 2 tablespoons of tomato paste
- 1 teaspoon of ground cumin
- 1 teaspoon of ground paprika
- 1 teaspoon of turmeric
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 tablespoons of vegetable oil
- 3 cups of vegetable broth
Instructions

Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.

Add the carrots, bell pepper, and cabbage to the pot, and sauté for another 5 minutes.

Stir in the chopped tomatoes, tomato paste, cumin, paprika, turmeric, salt, and black pepper. Cook for an additional 2 minutes.

Pour in the vegetable broth and bring the stew to a boil. Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the cabbage is tender.

Serve the African Cabbage Stew hot with your choice of bread or rice.
